From oncology to coffee farming
Shattah’s unconventional path to coffee began in the early 2000s, when he first entered the industry through coffee shops in Colombia. As a fourth-generation coffee grower, he saw an opportunity to elevate Colombian coffee by focusing on scientific precision rather than traditional practices. Instead of simply inheriting land, he chose a specific region with the perfect altitude, climate, and rainfall to grow high-end specialty coffee. This deliberate approach laid the foundation for the success of Finca La Negrita.
The science behind coffee innovation
Unlike many producers who rely on generational knowledge, Shattah applies data-driven experimentation to every aspect of coffee cultivation. His expertise in microbiology, food engineering, and fermentation science allows him to manipulate fermentation environments, resulting in complex and unique coffee profiles.
One of his key innovations is the nitrogen flush technique, a groundbreaking process used during anaerobic fermentation. By flushing out carbon dioxide and carbonic acid with nitrogen, he prevents excessive acidity while allowing the yeast to fully express its potential, leading to exceptionally clean and vibrant coffees.
Shattah has also experimented with Koji and other fermentation starters, applying techniques from beer brewing and winemaking to refine and enhance coffee flavors. His meticulous approach has led to the creation of over 1,200 unique coffee profiles, demonstrating an unprecedented level of control over processing variables.
A commitment to sustainability and quality
Beyond innovation, Shattah is deeply committed to sustainability. He ensures year-round employment for his workers, supports local communities, and implements environmentally friendly farming practices. Finca La Negrita utilizes worm composting, organic fertilizers, and a seven-stage water filtration system that recycles water back onto the coffee plants, reducing environmental impact.
Shattah also emphasizes cleanliness in coffee processing, treating coffee as a food product. His farm’s infrastructure is maintained at food-industry hygiene standards, ensuring that every step of the process—from harvesting to drying—preserves the integrity of the coffee.
Elevating Colombian coffee on the global stage
Despite his success, Shattah recognizes the challenges facing Colombian coffee producers. While other countries like Panama and Costa Rica have capitalized on the high-end specialty market, Colombia’s industry remains fragmented. He advocates for greater collaboration among producers and the implementation of science-based approaches to improve quality and consistency.
Finca La Negrita’s signature Wush Wush coffee, known for its bold, “Terminator” flavor profile, will be featured at the Dubai Coffee Auction by DMCC live on February 10-11 and again during the global online auction on March 13. This rare, meticulously processed micro-lot represents the pinnacle of Colombian specialty coffee, offering buyers an opportunity to experience one of the most scientifically refined coffees in the world.

Shattah’s vision extends beyond his own farm. As the president of Colombia’s Specialty Coffee Association, he is working to bridge the gap between traditional growers and modern scientific practices.
