Ocoteno Farm is located in the community of Totutla, in the municipality of Huitzilan de Serdán in the state of Puebla. Since 2015, it has produced specialty coffee with the Marsellesa variety, which has excellently adapted to the agroecological conditions of the region.
The production is carried out under an environmentally friendly system that includes planting shade trees such as chalahuite (Inga), orange, and banana trees. Additionally, other soil regeneration practices are employed, such as the use of biofertilizers (beneficial microorganisms), which aim to restore soil fertility and reduce the use of chemical fertilizers by 30%. Miguel Ronquillo and his family are responsible for monitoring the production plan, from planting and maintaining the farms to the various processes in the wet mill. This meticulous care and continuous training ensure consistent quality, which has been recognized in different editions of the Cup of Excellence competition since 2019.
From the previous harvest onward, the farm has been applying fermentation processes based on protocols defined through several years of experimentation, with the goal of highlighting the best attributes of the bean. The vision as a family business is to achieve a level of profitability that allows for an improved quality of life for all workers involved in coffee production, in order to maintain the unity and roots of the families, which are often affected by migration.
