Coffee processing system:
The coffee was selectively picked from the trees. It dried on the patio for around 15 days, bring raked continually and was covered each night, until it reached the ideal humidity. It was processed and screened 16 up by hand. Then it was placed in paper bags on the farm itself, taking all possible precautions to keep it dry.
Concern about quality:
The producer takes all possible care to maintain the coffee’s humidity between 11% and 12%. After processing, it is stored in new bags. During the harvest only well-ripened beans are picked.
