Sítio da Serra is located in the city of Carmo de Minas and belongs to the Sítio da Torre familial group. It is located in the Circuito das Águas in the south of Minas Gerais, which is internationally recognized for the quality of its mineral water deposits, its exceptional climate and the beauty of its mountainous landscape, with coffee fields planted at altitudes ranging from 1200 to 1300 meters, providing the ideal conditions for producing specialty coffees.
Production method:
The coffee is picked selectively by hand, is washed and pulped and then is spread in fine laters and raked several times per day until reaching 11.5% humidity. Lots are always identified and tracked. They are kept in rest boxes for about 30 days, then are processed and taken to Cocarive’s warehouse.
History of the farm:
Sítio da Serra is located in the Mantiqueira de Minas Designation of Origin, more precisely in the city of Carmo de Minas. It measures 29 hectares and has coffee at around 1250 to 1300 meters of altitude.
Sítio da Serra has always been focused on producing specialty coffees and they perfect their techniques of planting, cultivation, harvesting and mainly post-harvest processing.
The work is quite arduous and demands much care and labor, at an elevated cost. However, it is very gratifying to see the lands producing its “green gold,” with quality. The producers never forget to preserve the environment, as they are certain that human/environment integration provides sustainable coffee cultivation.
