Alto uses familial agriculture and is run by the union of the first and second generations, mother and son. The two split the responsibilities between themselves for all tasks, decision taking and coffee production processes, from caring for the coffee trees, to the harvest (a process that demands extra labor from neighbors) to processing and final preparation of bags of the product. The farm does not yet have any certifications.
The processing system of the coffee registered for the Cup of Excellence Brazil 2023 competition began with the harvest, during which the producers took care to pick health beans ready to be collected. Then the coffee was taken to a community wet mill, where the green beans and ones of inferior quality were separated from the ripe cherries. These were pulped and spread on a covered cement patio. Careful drying was next, which demanded attention to time under the sun, protection from rain, and raking the coffee on the patio, to maintain the quality of the flavor, appearance, smell and acceptable humidity level.
When the drying process was finished, the coffee was taken to a dry mill, also communal. Finally, the beans were screened and selected, seeking the meet the standards and requirements of the competition.
