We mentioned an intentional embrace of the elements of wild yeasts, bacteria, and micro-cultures which naturally occur in the ecology of coffee processing in each area: this type of fermentation results in an explosion of flavor which we believe is the truest version of the potential that coffee has. Our Spontaneous Fermentation is an homage to Lambic Fermentation in beer. You are not only tasting the coffee but you are tasting the sunshine that day and the texture of the wind. In Spontaneous Fermentation Hamasho, this results in notes of oleander blossom, passionflower, chardonnay, pineapple gummy, guava candy. It is a tactile and enveloping coffee experience.
