San Gerardo is a farm that has passed from generation to generation and has been in the hands of the family which is passionate about coffee.
At the end of the 19th century, before becoming a coffee farm, San Gerardo was dedicated to producing natural dyes based on "cochinilla" (woodlouse). However, with the development of artificial dyes it was decided to turn the farm into a coffee plantation.
Currently, Paul wants to introduce new varieties of coffee to Finca San Gerardo and is starting with new aerobic and anaerobic fermentation processes.
