Since 1974, we are producers dedicated to coffee in the town of San Pablo Coapan, in the municipality of Naolinco, Veracruz. Now, following the steps of my grandparents I and my family began to produce coffee in our farm El Izote. this farm was dedicated to the production of the Izote flower. Izote derives from the Nahuatl word izotl, and is a greenish or creamy white flower produced by a wide variety of plants of the yucca genus, of the Agavaceae family. To honor the previous main activity of the farm, I named this way. The farm is located at a height of 1470 meters above sea level, Longitude (dec): -96.907222 Latitud (dec): 19.650278.
Over time, in our farm El Izote, the varieties of arabiga coffee we had changed. Our current farm varieties are Geisha 5%, Bourbon 15% and Marsellesa 80%. The same varieties are cultivated under shade with hass avocado trees, jinicuil, banana, lemon, peach, among others.
We have been growing and processing coffee for more than 4 generations. With the same love, dedication, and effort of our ancestors, we share it with you.
For our lots we cut pure red coffee cherries, we do flotation to remove floaters and impurities, ferment in plastic aerobic uncovered containers for 8 hours, until degraded sugars remain stick on the hand when the mucilage detaches to the touch of the grain, we washed the coffee with spring water and dried at the sun in raised beds. We avoid the use of chemical products, soil regeneration based on the elaboration and application of organic fertilizers.
